I’m an omnivore. I’ve done a lot of experimenting (read:EATING) of foods. My truth is that I have more energy, satiety and brain power when I have fat in my diet.
It took me a while to get here. Doesn’t dietary fat make you fat?
I LOVE cheese 🧀 but isn’t dairy “bad”?
I’m also a highly empathetic person, so I have an extreme awareness about the killing of animals for my personal consumption. Doesn’t that make me a hypocrite?
Doesn’t the heating of the vegetables in this recipe destroy the nutritional content of a natural raw vegetable?
☝️ If you were to ask me any of the above questions at any given point of my life, I would have had an opinion to share.
Now I am simply armed with my own truth. No one size fits all way of eating. With a planet full of 7.8 billion people there could NEVER be a right way to cook, eat, live. I’m unique, I’m evolving and currently I’m eating meat! Head to https://www.worldometers.info/world-population/ if you want to feel super insignificant…7.8 BILLION.
If your current dietary choices align with a lower carb, higher fat vibe then these tasty little morsels are for you!

Not sure what I’m talking about…check out Mark Sisson’s Primal Blueprint! I heard Mark speak in one of my health coaching modules and he is full of hard, authentic truths that he’s tested over the course of his 62 years as an endurance athlete and personal trainer. Refined carbs are not cool, not necessary, and not part of a healthy diet.
Anyway…the recipe is as follows:
•10 large cage-free, free-range hen eggs
•1 cup of shredded cheese (your choice)
•1 pound fresh sausage (if you’re from the Illinois Valley VALSANOS is sickkkkkk bro)
•1 small red bell pepper-chopped
•1 small yellow pepper-chopped
•1 cup chopped mushrooms
Mix it all together! Okay, don’t you love when recipes say this?! Quick + easy!
Line muffin tins (or don’t…I ran out of liners, so half of mine didn’t have a paper, whatev). Make sure to grease either way.
Fill cups 2/3 full and bake at 400 for 13-15 mins.
Snackable, freezable, shareable.
